Sirloin Tip Steak with Citrus Butter

INGREDIENTS

  • 1 Blackwell Angus® Whole Sirloin tip Steak
  • 1/3 cup extra virgin olive oil
  • 1/4 cup reduced sodium soy sauce
  • 2 tbsp lime or lemon juice
  • 2 tbsp packed light brown sugar

Chili Citrus Butter

  • 1 stick salted butter
  • 2 tbsp chili powder
  • 2 tbsp finely minced garlic
  • Juice and zest of 1/2 a lime
  • 1 tbsp lemon zest
  • 1 tbsp orange zest
  • 2 tbsp chopped parsley

INSTRUCTIONS

  1. Marinate your Sirloin tip steak in evoo, soy sauce, and lime juice for at least an hour, or overnight in the fridge.
  2. Remove your steak from the marinade and rub with light brown sugar. Allow it to sit a bit while you pre heat your griddle.
  3. Pre-heat your griddle to medium heat.
  4. Drizzle griddle with olive oil and add your sirloin tip steak. Sear until cooked to your liking.
  5. Mix all citrus butter ingredients in a small pot and warm over low heat.
  6. Remove from griddle and allow the steak to rest before slicing, and serve on a platter with a ramekin of citrus butter for dunking and drizzling.
  7. Serve with fresh tortillas, chopped onions, seared peppers, crumbled Cojita cheese, salsa, and cilantro.
