Ribeye Roast

INGREDIENTS

  • 5 lb Blackwell Angus® Ribeye Roast
  • 4 tbsp melted butter
  • 2 tbsp minced garlic
  • 2 tbsp kosher salt
  • 2 tbsp Italian seasonings

INSTRUCTIONS

  1. Preheat the oven to 450°F.
  2. Let the roast come to room temperature.
  3. Cover the roast with melted butter using a brush.
  4. Mix garlic, salt, and Italian seasonings in a bowl and cover the roast with this mixture.
  5. Place the roast on the center rack in the oven and cook at 450°F for 15 minutes.
  6. Reduce the temperature to 325°F and continue roasting for about 20 minutes per pound or until desired doneness is reached using a digital thermometer:

    110-115°F for rare
    120-125°F for medium-rare to medium
    130-135°F for well-done
  7. Transfer the roast to a cooling rack or cutting board, tent with foil, and let it rest for 15-30 minutes.
  8. Slice across the grain to serve.
